Sunday Breakfast

i used to not do breakfast, now my almost daily breakfast is a target of 250-300 calories in the form of either

a quaker 25% less sugar peanut butter chocolate granola bar and a caribou choclate mocha granola bar (250 cal total)
or a peanut butter sandwich on one slice of bread
or apple or banana and one granola bar or small PB sandwich.

i like oatmeal also but it makes ya gassy and you can't eat it on the road.

Lately I've really been loving Stonyfield Farm's full-fat "vanilla truffle" organic yogurt. It's so rich and creamy, almost like Coldstone ice cream, with decadent swirls of chocolate and vanilla... at the same time it's kinda tart, so it's not too heavy or overpowering.

Two days ago I made a savory matzo brei. I put finely diced shrimp in it, so it wasn't exactly Jewish. Kikkoman tempura sauce concentrate, little sugar, garlic, diced shrimp, some white pepper all sauteed in a skillet. Matzo meal soaked in a bowl with water, some of the savory filling was added to the "batter," and then mixed. Add to skillet, flip like a pancake halfway through. Remaining filling served on top.

Nice. I made sweet potato pancakes for Thanksgiving, and it was surprisingly easy and tasty. For sure it's better than the canned stuff with marshmallows on top.

Stir fry shredded sweet potato and minced garlic with a nonstick pan, season with coarse salt and pepper, and when tender, flatten the sweet potatoes into a pancake, wait a few minutes, and then flip. No eggs or flour or squeezing needed; sweet potatoes are nowhere as wet as regular potatoes.

I made mine in the afternoon and reheated them in the oven. Serve with creme fraiche and chopped chives.

Niiiiiiice. Our sweet potato casserole we have for holidays isn't from a can, nor does it have marshmallow topping. That kinda stuff gets lumped with jello salad in my mind as SLOP from the 1950s that should never be revisited. Same with canned fruit cocktail... puke.gif


But yours sounds really good...might have to try that sometime, sans the teflon pan, though.

ocn's schizo healthy/guilty pleasure breakfast wrap:

one slice bacon, cut into bite size pieces before cooking

one 2-egg cup egg beaters

one slice jalapeno jack cheese

one medium whole wheat tortilla


cut up bacon and fry on medium. turn with tongs until crisp

without draining pan, pour in egg beaters over bacon pieces

break up slice of cheese, throw in pan

cook, stirring to ensure complete cooking of eggs

while filling mixture is cooking, warm tortilla for easy folding

when filling mixture is fully cooked, spoon out onto warm tortilla. fold top and bottom down onto mixture, then roll tortilla until mixture is fully enclosed

variation: add a bit of salsa to egg mixture in pan and cook together

enjoy with the breakfast beverage of your choice

Breakfast is usually lunch, however this week I did actually make breakfast for 2.

  • 5 large eggs
  • 1 cup or so (I usually eyeball it) Heavy Cream (this makes the eggs extra rich and fluffy)
  • 2 tsp Salt (I usually eyeball it)
  • 1 tbs Pepper (I usually eyeball it)
  • 1 tbs butter
  • 2-3 slices of cheese of your choice (I only had American this time)
  • 8 breakfast sausage links
  • and/pr 6 slices of bacon


Combine eggs, cream, salt, and pepper into large mixing bowl. Mix thoroughly.

Lightly grease pan with butter and turn heat on to medium.

Pour egg mixture into pan, add remaining butter.

Quickly, place sausage in microwave or pan cook it if desired.

While sausage cooks, stir egg mixture constantly, this is important to do as it cooks to prevent sticking/burning.

If you have bacon you can microwave it, or if you have one of those George Foreman grills (we do) turn it on and use it, cooks for about 2 minutes. I swear those grills were made for cooking bacon...the best bacon I've ever had came from using that grill. Crispy yet juicy...yum. Anyway...

Continue to stir egg mixture, as it cooks and becomes solid flip the egg mixture with whatever you are using to stir it. Cook it just until most of the liquid/juices are gone. Reduce heat to very low. Break up and mix in cheese until melted.

Place food on 2 plates and serve.

Nothing complex but very good IMHO.

I skipped breakfast because I overate last night. I made this dish my friends moan over, since they were here, and long-story short, we stuffed ourselves very well.

Well, since you want to hear:

The George Forman does do a great job with bacon plus it doesnt spatter all over the place like on a griddle. For me its eggs sunny side up and bacon and/or sausage links. And not just any bacon or sausage links. We have a really good local meat market that makes some of the best breakfast links and patties and bacon one can ever hope for.
