Montreal style pizza The crust is puffy. Thick. But the bread is airy and soft. The crust is crunchy. Oven baked of course. Wood fired ovens but those were outlawed several years ago because of air pollution. So a regular pizza oven it is. Baked until the crust is golden brown. Some old school Italians and Greeks used to put 7Up in the dough. The tomato sauce would be a slight variation of the original tomato sauce of the original pizza. Sweet san marzano tomatoes, basil, oregano, fennel, a tad of chili flakes, salt, pepper. All kinds of toppings but the stereotypical toppings would be all dressed. All dressed: thinly sliced pepperoni, thinly sliced green bell peppers, mushrooms and mozzarella cheese. The pepperoni is Milano pepperoni. That is the secret to our pepperoni. Outside of Italy and og pizza, old school original Montreal pizza from the 1900s-1980s in Italian or Greek family owned restaurants at each and every Montreal street corner literally, is truly the best. And I will fight anybody on any hill defending Montreal pizza and calling Montreal pizza the best ANYWHERES in the world with the exception of Italy. And while I havent had pizza in Italy, there is 1 Montreal pizza joint who serves authentic OG pizzas and they are simply DELIZIOSO!!!
