Breakfast is usually lunch, however this week I did actually make breakfast for 2. 5 large eggs1 cup or so (I usually eyeball it) Heavy Cream (this makes the eggs extra rich and fluffy)2 tsp Salt (I usually eyeball it)1 tbs Pepper (I usually eyeball it)1 tbs butter2-3 slices of cheese of your choice (I only had American this time)8 breakfast sausage linksand/pr 6 slices of bacon Combine eggs, cream, salt, and pepper into large mixing bowl. Mix thoroughly. Lightly grease pan with butter and turn heat on to medium. Pour egg mixture into pan, add remaining butter. Quickly, place sausage in microwave or pan cook it if desired. While sausage cooks, stir egg mixture constantly, this is important to do as it cooks to prevent sticking/burning. If you have bacon you can microwave it, or if you have one of those George Foreman grills (we do) turn it on and use it, cooks for about 2 minutes. I swear those grills were made for cooking bacon...the best bacon I've ever had came from using that grill. Crispy yet juicy...yum. Anyway... Continue to stir egg mixture, as it cooks and becomes solid flip the egg mixture with whatever you are using to stir it. Cook it just until most of the liquid/juices are gone. Reduce heat to very low. Break up and mix in cheese until melted. Place food on 2 plates and serve.
